The so-called sandwiches and snacks taken between meals are not at all mandatory, but they can be very convenient at certain times to recharge energy or calm anxiety during meals. The best way to avoid the temptation of vending machines and the super mechanized stuff is to make it at home. For example, very nutritious seeds and oatmeal cookies.
This recipe is very simple and you can play with the proportions of seeds to adapt it to your tastes or to what you have in your pantry. The only important thing is that you must respect the amount of chia, because it acts as a binder. Look closely in the oven so that it is crispy without exaggerating as it can burn very quickly.

how to make the cookies
Place the oats, all the seeds and the salt in a bowl. Mix well, add olive oil and honey or agave syrup and stir everything a bit. Add water and mix with a tongue or large spoon until smooth.
Cover with a cloth and let sit for 10-15 minutes. Meanwhile, preheat the oven to 180ºC, prepare the baking tray and cut two pieces of non-stick baking paper.
Pour all the dough into a single sheet, form a kind of compact ball on a wet year, cover with another sheet, start spreading with rolling pins and make sure it is compact and round in shape. Leave a thickness of a few millimeters.
Take the bottom paper with the dough spread on the tray and bake for 15-18 minutes. It will turn a little golden and become firm. With the front blade turn it over. Put it back on the tray and bake for another 15-20 minutes to prevent burning.
Let cool in the oven and voila!
